In a small skillet, heat up the butter over medium heat.
Sprinkle the apricot halves with the brown sugar and then place, flesh side down, into heated butter to brulee. Cook about 4-5 minutes or until browned.
While apricot is cooking, add the rolled oats, almond milk, and collagen powder into a small saucepan and heat over low-medium heat until it starts to bubble slightly, about 3-4 minutes.
Stir periodically until it reaches your desired consistency, about another 1-2 minutes.
Top the oatmeal with bruleed apricot halves and chopped almonds to serve.
