Pre-heat your air-fryer or oven to 400F.
Next, pat dry your chicken wings using a paper towel. Place into a large mixing bowl.
Combine the zaatar, salt, garlic powder and baking powder into a small bowl and mix together.
Add the seasoning over the chicken wings.
Add the olive oil to the chicken wings next, and then toss everything to make sure the wings are well coated.
Place the wings into the air fryer and cook for 20 minutes, flipping the wings about half way through. If using traditional oven - place onto a wire cooling rack over a cookie sheet. You may need to cook for slightly longer with this method.
While the wings cook, prepare the glaze. Combine the honey, harissa, lemon juice, and salt in a small bowl and whisk to combine. Set aside.
Optional - Use the broiler or crisp finish option on your air fryer (if you have it) and cook an additional 3 minutes before removing.
Place wings back into your mixing bowl and toss in the harissa honey glaze. Gently toss the wings in the sauce until well glazed.
Top with some fresh cilantro and serve immediately.
