We were not big fans of broccoli as a side dish until we started roasting it! The florets get perfectly crispy and the flavor is completely different. We started tossing the roasted florets in a simple miso glaze and knew we had to share the recipe. This Asian miso roasted broccoli is the perfect side dish to accompany your favorite proteins for an easy weeknight dinner.
For two people, one large head of broccoli is usually sufficient, but this recipe can be easily doubled for larger groups. We prefer to bake ours with just a little pepper and garlic powder. Then we toss it in the miso dressing at the end to ensure the perfect amount of crispiness! The key to obtaining crispy roasted veggies is roasting at high temperatures. We recommend setting the oven to 425F for this recipe.
The sauce is comprised of three simple ingredients – Miso paste for a punch of umami flavors, maple syrup for a hint of sweetness, and soy sauce for saltiness. Miso paste is made of fermented soybeans. Sounds delicious, I know. But the flavor is something that’s very difficult to replicate. We opt for a darker miso in this recipe, as we prefer the stronger taste. If you’re new to miso, you might prefer a lighter miso paste to start. The good news is that miso keeps well in the fridge for several months, so you won’t have to worry about wasting it!
Once the broccoli has gotten crispy and brown, quickly toss it in the miso sauce. We like to top off the finished dish with some sesame seeds and green onions. Asian Miso Roasted Broccoli
Ingredients
- 1 Large Head of Broccoli Broken up into small florets
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Maple Syrup
- 1 Tablespoon Miso Paste
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Black Pepper
- Nonstick Spray We recommend canola or olive oil spray
Instructions
- Preheat oven to 425F.
- Spread florets onto large baking sheet and sprinkle with garlic powder and black pepper.
- Spray generously with baking spray, toss, then spray generously a second time. Spread out florets evenly across the pan and bake for 25 minutes.
- While the broccoli roasts, prepare the miso dressing. Combine the miso, soy sauce, and maple syrup and whisk to combine.
- When the broccoli has started to brown and get crispy, remove and toss quickly in the sauce. Serve topped with sesame seeds or green onions.
