Bruleed Apricot and Almond Oatmeal

This apricot and almond oatmeal is one of my favorite breakfasts! It takes under 10 minutes to make and is super filling. Plus, apricots are in season right now, so it’s the perfect time to make this oatmeal.

Summer is here, which means all the best fruits are in season! Absolutely love all the stone fruits, melons, and cherries and finding ways to incorporate them into my diet. Apricots may just be my favorite summer fruit. They have a great balance of sweetness and tartness that is emphasized when they are cooked a bit. This is why I LOVE apricot jam and apricot baked into tarts, and how I came up with the idea of a bruleed apricot and almond oatmeal.

I like to use plain rolled oats for my oatmeal, because it cooks fairly quickly and is easy to buy in bulk. You can definitely use steel cut oats if you prefer them, but you will have to adjust the cooking time as suggested by the packaging. I make mine on the stovetop using our tiny All-Clad saucepan (it’s the perfect size for this job!) with some vanilla or plain almond milk.

In order to stay full all morning, I usually add some type of protein powder. I’ve heard so much about collagen powders and their benefits for skin/hair/nails, amongst other things, I decided to switch over from a traditional protein powder. Bruleed Apricot and Almond Oatmeal

While I love this collagen powder, you can definitely use any type of protein powder you prefer. I’ve made it with a vanilla protein powder and it’s also delicious! Top off the bowl with some chopped raw almonds and enjoy. If you crave a little extra sweetness, I recommend a drizzle of honey over the apricots.

Ingredients Method

Ingredients
  

  • ½ Cup Rolled Oats
  • ½ Cup Almond Milk Plain or Vanilla
  • 1 Scoop Girl & The Sea Marine Collagen or other collagen/protein powder of your choice
  • 1 Apricot Halved with pit removed
  • ½ Tbsp Butter Or Ghee
  • ½ Tsp Brown Sugar
  • 1 Tbsp Raw Almonds Chopped or Sliced

Method
 

  1. In a small skillet, heat up the butter over medium heat.
  2. Sprinkle the apricot halves with the brown sugar and then place, flesh side down, into heated butter to brulee. Cook about 4-5 minutes or until browned.
  3. While apricot is cooking, add the rolled oats, almond milk, and collagen powder into a small saucepan and heat over low-medium heat until it starts to bubble slightly, about 3-4 minutes.
  4. Stir periodically until it reaches your desired consistency, about another 1-2 minutes.
  5. Top the oatmeal with bruleed apricot halves and chopped almonds to serve.
