So excited to share another awesome Instant Pot recipe with you guys! We love a good pulled pork, but hate how long it can take. It’s a perfect dish to make in the Instant Pot to cut down on time. Since it’s about to be peak hatch chile season, we thought why not do a hatch chile pulled pork! There’s some much flavor from the hatch chiles that you don’t need any additional sauce at the end. The meat is perfect to serve with rolls and some pickles for easy pork sandwiches. Great for game days or parties!
The process can’t be easier to make this dish. We simply sear the pork directly in the Instant Pot using the saute mode. While it sears, we blend the roasted hatch chiles with the remaining ingredients and then pour that over the pork and cook for about 45 minutes. SO easy! We actually served ours over some makeshift salad bowls with lettuce, tomato, and black beans. We’re trying to stick to low carb options! But, we couldn’t resist buying a small bag of Hawaiian rolls (the best rolls, am I right?) and making a mini sandwich.
I highly recommend making a big batch of this pork and eating it all week long. You can get so many meals out of it. Think hatch green chile pulled pork tacos, quesadillas, nachos, salad bowls, or even for a breakfast hash! We went for tacos and a breakfast hash this week and both were spectacular.

Instant Pot Hatch Green Chile Pulled Pork
Ingredients
- 3 Pounds Pork Shoulder Bone-In
- 2 Tbsp Canola Oil
- 1 Pound Hatch Green Chiles Roasted
- ¼ Cup White Distilled Vinegar
- ½ Medium Yellow Onion
- 4 Cloves Garlic
- ½ Cup Cilantro
- ½ Tsp Cumin
- 1½ Tbsp Kosher Salt
- 1 Tbsp Black Pepper
Instructions
- Generously season pork with the salt and pepper on all sides. Turn on your Instant Pot to the saute mode and add canola oil. While searning, blend remaining ingredients in blender. Once meat seared, pour blender mixture. Cook under high pressure for 45 minutes.
- Sear the pork on all four sides (about 2 minutes per side) until slightly browned.
- While the meat is searing, combine the remaining ingredients – hatch chile, vinegar, onion, garlic, and cilantro, into the blender. Blend until smooth.
- Once the meat has finished searing, pour hatch chile blend over the meat, being sure to coat it evenly.
- Close the Instant Pot and set to high pressure for 45 minutes. Can use manual release or natural release when done.
- Shred with fork and toss back into the sauce. Serve with your favorite buns!
