Last days of summer and while we are SO excited for fall, we miss Hawaii 🌺

Anyone else LOVE recreating dishes they ate while traveling? 🙋🏻‍♀️It’s one of our fav ways to get inspiration in the kitchen.

We tried macadamia nut ice cream for the first time @jojos_shave_ice (with cold brew shaved ice over it 😍) and knew we’d be missing it once we got home.

We picked up some unsalted Mac nuts before leaving Hawaii and finally got around the making the ice cream last weekend. The results were almost as good as the original 👏🏻

One of my favorite parts of our Kauai trip were our nature 🌱walks every morning - Mila loved wandering outside and searching for special “treasures” or looking for animals and insects.

I love when we get to use our travels as a real world classroom. She LOVED learning about the flora and fauna, about volcanos and the ocean 🌊

And best of all she can’t wait to go back and show all the special “treasures” she found to her future baby brother ❤️

With this trip, I’ve now been to all the Hawaiian islands, and I have to say, Kauai was my favorite by far. The garden isle did not disappoint 🌺

The highlight was seeing the stunning Na Pali coast in person. A bucket list item for me ✨

Mila insists she can’t wait to come back and show baby brother 🤱🏻the magic of Hawaii one day soon.

Looking at these photos you would never know that our toddler had motion sickness for the first time and vomited 🤮(3 times) less than an hour into a 5 hour sunset dinner cruise of the Na Pali coast 😫

We’ve taken Mila on 5 boat 🛥️ rides before, including a whale 🐳 watching tour in Cali and a very bumpy ride in the Algarve where 80% of the passengers were sick 🤢 and she did 💯 so we thought we were golden but, of course, in true toddler fashion, we got a very different experience this time 😂

Just after getting into open ocean 🌊 Mila decided sitting was boring and wanted to walk around the boat with Marcelo. She did two whole laps basically jogging the boat while we bumped along large waves. Promptly sat down and proceeded to vomit 3 times in rapid succession with zero warning ⚠️

The staff on @capt.andys were AMAZING. Helped us clean up and offered her a clean T shirt. She took a short nap 😴 after and woke up like nothing happened. Proceeded to kill some filet mignon 🥩 and roasted potatoes for dinner 🍽️ and enjoy seeing “Te Fiti” island from Moana 😂😂

Never a dull moment while traveling with a toddler. Goes to show pictures aren’t always what they seem and also to roll with the punches. At the end of it all, we agreed this was probably the best boat tour we’ve ever taken despite the hiccups ❤️

4 AM - Wake up call (slept in clothes and packed breakfast to take with us) and Uber to airport
6 AM - Flight ✈️ out of DFW
9:30 AM (7:30 AM Cali time) - Arrive LAX. Grab some lunch to go
11 AM (9 AM Cali time) - Depart LAX to Lihue (Toddler napped 😴 2 hours)
5:00 PM (12:00 Kauai time) - Arrive Lihue, get rental car, pick up groceries, get a snow cone 🍧 to keep toddler happy
8:30 PM (3:30 PM Kauai time) - Check in at condo
9:00 PM (4 PM) - Pick up hot dogs 🌭 @pukadogkauai + quick swim in pool and tour of beach to keep her awake.
11 PM (6 PM) - Melatonin gummy (check with pediatrician first) + Lights out

Still some meltdowns and tears but overall she did great! Can’t wait for more adventures to come 🌺

Quick cheese burgers in lettuce wraps our always a great go-to for us. Minimal prep, still healthy ish, and toddler friendly!

🌍 Love cooking and eating our way around the globe in our own kitchen.

Made some quick shrimp 🦐 spring rolls last night complete with homemade pickled carrot and radish! Traditionally, would use daikon radish but couldn’t find any at our local supermarket so we used watermelon radishes - still delicious!

Paired with a peanut sauce for dipping, a quick but fun dinner option!

Who doesn’t love taco night?? This is one of our toddler’s favorite dinners - she especially LOVES helping prep the guacamole 🥑

We mix it up with fish tacos, chicken, beef, or even vegetarian with cauliflower and sweet potatoes sometimes.

She loves the independence that comes with letting her pick which items she wants to put in her taco 🌮

✨It’s National Infertility Awareness Week✨

We are now 21 months into trying to conceive for our second child. I have had so many HARD days in this time frame, but I’m so proud of how resilient I have been. Here’s just a short list of things I’ve incorporated into my life to help to continue to THRIVE throughout the hard times.

1️⃣ THERAPY!! I cannot emphasize this one enough. @womens_mental_wellness_dallas has been a godsend for me during this time ❤️
2️⃣ Talking to my friends and family about what’s happening. I kept it to myself for so long, and that just made me feel more isolated.
3️⃣ Exercise - for me, I realized that group exercise classes, in particular, yoga 🧘 and barre have helped me feel like a part of a community outside my work and family life. And helped me regain trust in my body
4️⃣ Cooking 🧑‍🍳 - At first, I started hyperfocusing on everything I ate and how it could make my fertility problems worse. Now, I focus on what it could do to help. Cooking with fresh ingredients, colorful fruits and veggies, and foods that make me feel joy has helped so much
5️⃣ Date Nights - events and plans to look forward to and stay connected with your partner 👫
6️⃣ Gratitude journaling - reminding myself of my blessings
7️⃣ Reading - 📖 Escaping the real world into girly romance novels or a juicy mystery book 📚
8️⃣ Getting outside ☀️ I try to take a short leisurely walk at lunch to re-set, especially when the weather cooperates

✨You’ll wanna hit save in this one✨

I know warmer weather is here but I still love a hearty, good-for-you, bowl of soup for lunches all week.

I used bone broth in this recipe to add some extra protein but you can stick to water or vegetable broth if you want to keep this vegan/vegetarian

🥣 Ingredients:
▪️1 Tbsp Olive oil
▪️1/2 large onion, diced
▪️ 3 cloves garlic, minced
▪️ 3 carrots, diced
▪️ 1 rib celery, diced
▪️ 2 Tsp grated ginger
▪️ 1 cup green/brown lentils, rinsed
▪️ 1/2 cup red lentils, rinsed
▪️ 1 tsp turmeric
▪️ 3/4 tsp cumin
▪️ 1/2 ground coriander
▪️ 1/2 tsp kosher salt
▪️1/4 tsp black pepper
▪️ 4-5 cups of chicken bone broth, veggie broth or water
▪️Juice of 1 lemon
▪️ 1/4 cup chopped cilantro

For the pita 🫓 chips:
▪️ 1 large, thing pita, cut into squares
▪️ 2 Tsp olive oil

Directions:
1. Heat olive oil in a large Dutch oven or pot
2. Add onion and cook until translucent
3. Add garlic, carrot, celery, and ginger. Cook for 5-7 minutes until veggies are slightly softened
4. Add the rinsed lentils, spices and stir to combine
5. Add the broth, bring to a simmer, then cover and let cook 30-45 minutes or until lentils have cooked through
6. Combine the cut up pita with olive oil and bake at 400F for a few minutes until lightly golden
7. Top the soup lemon juice, pita chips, and cilantro prior to serving
