Quarantine Pasta Pummarola

Ingredients
  

  • 3 Tablespoons Olive Oil
  • 12 Ounces Tomatoes Cherry Tomatoes or Diced Tomatoes, can also sub with canned
  • 2 Cloves Garlic Minced
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • ½ Teaspoon Red Pepper Flakes Optional
  • ¼ Teaspoon Granulated Sugar
  • 1 Handful Fresh Basil Roughly chopped
  • 6 Ounces Spaghetti, Angel Hair, or Capellini Approx ½ a package

Instructions
 

  • Heat water to boil and cook pasta according to package instructions.
  • While your pasta cooks, heat up the olive oil in a saucepan over medium heat.
  • Add the garlic and cook for 1-2 minutes until lightly golden being careful not to burn. Then add tomatoes and spices and stir gently. Increase to high heat and cook for about 5 minutes until the tomatoes have softened and broken down slightly.
  • Add in the fresh basil and remove from heat.
  • Strain your pasta and add directly into the sauce. Toss to combine.
  • Serve with fresh grated parmesan if desired.
