Quarantine Pasta Pummarola

Ingredients
  

  • 3 Tablespoons Olive Oil
  • 12 Ounces Tomatoes Cherry Tomatoes or Diced Tomatoes, can also sub with canned
  • 2 Cloves Garlic Minced
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • ½ Teaspoon Red Pepper Flakes Optional
  • ¼ Teaspoon Granulated Sugar
  • 1 Handful Fresh Basil Roughly chopped
  • 6 Ounces Spaghetti, Angel Hair, or Capellini Approx ½ a package

Method
 

  1. Heat water to boil and cook pasta according to package instructions.
  2. While your pasta cooks, heat up the olive oil in a saucepan over medium heat.
  3. Add the garlic and cook for 1-2 minutes until lightly golden being careful not to burn. Then add tomatoes and spices and stir gently. Increase to high heat and cook for about 5 minutes until the tomatoes have softened and broken down slightly.
  4. Add in the fresh basil and remove from heat.
  5. Strain your pasta and add directly into the sauce. Toss to combine.
  6. Serve with fresh grated parmesan if desired.
