Easy Italian Wedding Soup

Ingredients
  

  • 1 Tablespoon Olive Oil
  • 1/2 Yellow Onion diced
  • 1.5 Cups Celery diced; about 3 stalks
  • 2 Cups Carrots diced; about 3-4 carrots
  • 2 Cloves Garlic minced
  • 8 Cups Low Sodium Chicken Broth
  • 15-17 Italian Style Meatballs Frozen or uncooked
  • 1 Bay Leaf
  • 1 Parmesan Rind Optional
  • 1 Bunch Curly Kale chopped
  • 1/2 Cup Stellini Pasta or other small pasta of choice
  • Salt and Pepper to taste
  • 1/2 Cup Grated parmesan cheese for topping

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, celery, and garlic and saute for about 5-7 minutes or until onions are translucent.
  2. Add chicken broth, bay leaf, and parmesan rind,  and bring to simmer. 
  3. Gently add in your meatballs. Cover and let cook for about 30 minutes.
  4. Next, add in the chopped kale and your pasta, and cook for another 7-10 minutes, depending on how long your pasta needs to cook. 
  5. Add salt and pepper to taste and serve with freshly grated parmesan cheese.
