Set your Instant Pot to saute mode and cook add the chopped bacon. Cook for about 5 minutes.
Next, add in the onion, garlic, and hatch chiles. Stir and cook for another 5 minutes.
Next, add in the dried beans, beer, stock, and spices. Seal the lid and place on high pressure for 1 hour.
After 1 hour, you can choose to do either a manual release or natural release. Taste and adjust salt as needed.
Serve with fresh cilantro and a squeeze of lime juice.
