Instant Pot Borracho Beans

Ingredients
  

  • 1 Pound Dried Pinto Beans
  • ¼ Pound Bacon Coarsely chopped
  • ½ Pound Roasted Hatch Green Chiles Can substitute Hatch Green Chile Salsa or Canned Diced Green Chilis
  • ½ Large Yellow Onion Diced
  • 2 Cloves Garlic Minced
  • 4 Cups Low-Sodium Chicken Broth
  • 1 Can Beer Suggest Mexican beer such as Dos Equis or Corona
  • 1 Bay Leaf
  • ¾ Teaspoon Cumin
  • ½ Tablespoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • Limes and Cilantro For topping

Instructions
 

  • Set your Instant Pot to saute mode and cook add the chopped bacon. Cook for about 5 minutes.
  • Next, add in the onion, garlic, and hatch chiles. Stir and cook for another 5 minutes.
  • Next, add in the dried beans, beer, stock, and spices. Seal the lid and place on high pressure for 1 hour.
  • After 1 hour, you can choose to do either a manual release or natural release. Taste and adjust salt as needed.
  • Serve with fresh cilantro and a squeeze of lime juice.
