Italian Sausage and Garbanzo Bean Pasta

Ingredients
  

  • 2 Tbsp Olive Oil
  • 1/2 Pound Italian Sausage Casing removed
  • 1/2 Large Yellow Onion Diced
  • 3 Cloves Garlic Crushed
  • 1 Tbsp Tomato Paste
  • 28 ounces Crushed Tomato
  • 15 ounces Garbanzo Beans 15 ounces
  • 1/4 Cup Red Wine
  • 1/2 Cup Low Sodium Chicken Stock
  • 2 Bay Leaves
  • 1/2 Teaspoon Dried Parsley
  • 1/2 Teaspoon Dried Rosemary
  • 1/2 Teaspoon Kosher Salt Plus additional to taste
  • 1/2 Cup Whole Milk or Heavy Cream
  • 8 Ounces Penne Pasta Or any other pasta of your choice
  • 2 Tbsp Chopped Fresh Basil For topping
  • 2 Tbsp Grated Parmesan Cheese For topping

Method
 

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the garlic and onion and saute for 2-3 minutes until onions are translucent.
  3. Add the sausage, using a wooden spoon to break up the meat as it cooks.
  4. Next, add the tomato paste, crushed tomato, garbanzo beans, red wine, chicken stock, herbs, and salt. Stir to combine. Let simmer about 15 minutes while you cook the pasta.
  5. Cook the pasta according to package instructions. Drain.
  6. Reduce the heat to simmer and add your milk or cream, stirring to combine. Add salt to taste. Then, add in the drained pasta.
  7. Top with fresh basil and grated parmesan cheese.
