Italian White Bean and Sausage Skillet

While we love spending time in our kitchen cooking up delicious gourmet meals, we also appreciate a dinner with a few ingredients that can come together quickly. This rings especially true on nights we are both working late and don’t want to eat out. This Italian sausage skillet comes together in under 30 minutes, is cost conscious, and is a healthy and delicious meal your whole family will love.

Italian Sausage Skillet

We used an Italian turkey sausage for this recipe, but any type of Italian sausage including pork or chicken will work. We also opted for cannellini beans, as we felt they would pair better with the Italian sausage, but other types of beans would work fine too.

Italian Sausage Skillet

We like to cook the sausage separately before hand and slice it up before throwing into the skillet. If you have a grill handy, you could easily throw these on the grill as well. Once the sausage is cooked, the remaining ingredients are cooked in the cast iron skillet and simmered with the white wine. Meanwhile, we fry up two eggs on the side to place on top afterwards. The arugula is added in last to allow it to just barely wilt, and then the eggs are placed on top. The eggs could also be poached, if you prefer!

We topped ours off with Parmesan cheese and crushed red pepper and served it with some crusty Italian bread. A glass of that white wine on the side doesn’t hurt either. The best part about this dish is that it is easily customizable. We opted for an Italian theme, but you could do chorizo and black beans for a Tex-Mex version, or even andouille sausage and red beans for a Cajun version! There are so many options! Ingredients Method

Ingredients
  

  • 1/2 pound Italian Chicken Sausage
  • 1 clove garlic Minced
  • 1 14.5 ounce can White Beans or Cannellini Beans
  • 1 cup cherry tomatoes Halved
  • 2 cups Arugula Loosely torn
  • 1/2 cup Dry White Wine
  • 2 eggs
  • 1/2 cup Parmesan cheese Shredded
  • 1 teaspoon Crushed Red Pepper
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Heat 1/2 tablespoon olive oil in pan over medium heat. Gently pat dry the sausages and place into hot pan. Cook about 4-5 minutes on each side or until browned and mostly cooked through. Remove from heat, slice and set aside.
  2. In a cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add garlic and cook for 1-2 minutes until golden brown.
  3. Next, add white beans and white wine and bring to a simmer. Allow to simmer about 5 minutes.
  4. Next, add in the sausage, crushed red pepper, and tomatoes and cover.
  5. In a separate sauce pan, heat 1 tablespoon of olive oil over medium heat. Crack 2 eggs and cook sunny side up. While eggs are cooking, add torn arugula into skillet and allow to wilt slightly.
  6. Once the eggs are cooked, transfer over to the cast iron skillet, adding gently on top of beans and sausage.
  7. Remove from heat and top with grated parmesan. Serve with slice of toasted Italian bread.
