We are so loving creating recipes this summer! We are huge fans of all the summer produce. Fresh corn, melons, tomatoes, stone fruits, peppers, okra, eggplant, we can go on. Marcelo actually grew up with a peach tree in his backyard and loves fresh peaches. When we saw them on sale this week at the grocery store, we decided to use them in savory recipe. The idea of a peach salsa came to mind. Peaches pair wonderfully with pork, so we opted for grilled pork chops with peach salsa!
Marcelo recalls summer days spent canning peaches and making peach jam growing up. If you are lucky enough to own a peach tree, this probably sounds all to familiar. Eventually, you get tired of endless jars of peach jam, so you have to get creative. We loved how this spicy peach salsa turned out. I may have been eating it by the spoonful … The sweetness of the peaches perfectly offsets the spiciness of the serranos. The addition of the red bell pepper adds the right amount of crunch to it. Plus, it’s super simple, requiring no cooking at all. Just dice all the ingredients, throw it in a bowl and start prepping your pork chops!
We pound the pork chops with a mallet before cooking to tenderize the meat a bit. I highly recommend not skipping this step or your pork chops may turn out super tough. The seasoning blend we used has a Southwest flavor profile too, perfect for grilling. I recommend omitting the cayenne if you don’t want things to get too spicy with the peach salsa on top.
Serve the grilled pork chops with the peach salsa overtop. I recommend pairing with a big salad for a healthy, low-carb meal. Grilled Pork Chops with Peach Salsa
Ingredients
Peach Salsa
- 2 Medium Peaches Peeled, diced
- ½ Red Bell Pepper Deveined and deseeded and diced
- 1 Serrano Pepper Thinly sliced
- ½ Lime Juiced
- ¼ Cup Cilantro Chopped
- 1 Tbsp Olive Oil
- ¼ Tsp Kosher Salt
- 1/8 Tsp Black Pepper
Grilled Pork Chops
- 1 Pound Boneless Pork Loin Chops About 1 inch thick
- 1 Tsp Chili Powder
- 1 Tsp Brown Sugar
- ½ Tsp Garlic Powder
- ½ Tsp Paprika
- ¼ Tsp Cayenne
- ½ Tsp Kosher Salt
- ¼ Tsp Black Pepper
Instructions
- Combine all the ingredients for the salsa in a medium bowl and set aside.
- Combine all seasoning in a small bowl and mix until well combined.
- Using a mallet, pound the pork chops to help tenderize them. Then, season all sides generously with spice mix.
- Heat up your grill (or grill pan) over medium-high heat.
- Sear pork chop for about 7 minutes on each side, depending on the size of your pork chops.
- Top with the peach salsa.
