Instant Pot Hatch Chile Borracho Beans

Continuing on our Instant Pot obsession, we’re adding one more recipe to the mix, Instant Pot Hatch Chile Borracho Beans! The Instant Pot is spectacular for cooking beans from scratch, and what better way to prepare them then cooked with some bacon and beer?? Football season (and hatch green chile season) is just around the corner, and this is a perfect dish to make alongside some nachos or tacos for a crowd!

Instant Pot Hatch Chile Borracho Beans

Borracho beans means “drunken” beans in Spanish and is named this way because they are traditionally made with beer. This authentic Mexican dish usually also features some kind of pork, peppers, and plenty of spices and is often served like a soup, topped with crema and cilantro. We opted for using Hatch Green Chiles instead of the more traditional jalapenos because we love their mild flavor and they are about to be in peak season. You could definitely replace the hatch chiles with canned diced green chiles if you prefer. We like serving ours as a side dish to one of our favorite Mexican dishes like tacos or enchiladas.

While these can definitely be made with canned pinto beans, I highly recommend using dried beans. Slow cooking dried beans adds a certain texture that is hard to replicate with canned beans! Plus, with the Instant Pot (or pressure cooker), you can cook dried beans from scratch in about an hour, without presoaking! This is awesome for two reasons. One, dried beans are SUPER cheap. Like dirt cheap, y’all. So if you are trying to cut down on food costs, boom – tasty and protein filled meal for near nothing! Secondly, no need to plan ahead. When cooking dried beans from scratch, you often have to presoak for a full day prior in order for the beans to cook through. With this method, you could easily make this dish for a weeknight dinner if you wanted to!

Ingredients Method

Ingredients
  

  • 1 Pound Dried Pinto Beans
  • ¼ Pound Bacon Coarsely chopped
  • ½ Pound Roasted Hatch Green Chiles Can substitute Hatch Green Chile Salsa or Canned Diced Green Chilis
  • ½ Large Yellow Onion Diced
  • 2 Cloves Garlic Minced
  • 4 Cups Low-Sodium Chicken Broth
  • 1 Can Beer Suggest Mexican beer such as Dos Equis or Corona
  • 1 Bay Leaf
  • ¾ Teaspoon Cumin
  • ½ Tablespoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • Limes and Cilantro For topping

Method
 

  1. Set your Instant Pot to saute mode and cook add the chopped bacon. Cook for about 5 minutes.
  2. Next, add in the onion, garlic, and hatch chiles. Stir and cook for another 5 minutes.
  3. Next, add in the dried beans, beer, stock, and spices. Seal the lid and place on high pressure for 1 hour.
  4. After 1 hour, you can choose to do either a manual release or natural release. Taste and adjust salt as needed.
  5. Serve with fresh cilantro and a squeeze of lime juice.
