Who’s ready for some Monday Night Football?? Or just football in general, am I right? We’re all about the game day snack foods, but love creating some lightened up versions. This recipe for low carb buffalo shrimp with blue cheese is the ultimate example of this! Tangy buffalo sauce with a homemade blue cheese sauce for all the flavors with none of the guilt. What’s not to like?
If you don’t keep a bottle of Frank’s Red Hot Buffalo Sauce in your pantry, you are missing out! This is totally not sponsored, FYI, but we love their sauce because the ingredient list is simple, the flavor is perfect, and it’s cheap. Win-win. We actually have been using their special “wing” sauce and it’s perfect for this recipe. It’s their traditional sauce with some added canola oil to help with adhering to your protein of choice. This saves a step of having to combine the buffalo sauce with butter or oil.
We always opt for blue cheese dressing over ranch for our dipping, but that’s just our personal preference! Since the shrimp are so easy to prepare, we chose to make our own blue cheese dressing. A lot of the store bought blue cheese dressings are heavy on the cream and low on the blue cheese for our tastes! We like things extra cheesy. Feel free to buy your favorite store bought ranch or blue cheese dressing to save time.
Once the shrimp have been seared, simply toss them in the wing sauce and serve with the dressing and your choice of vegetables. We like a combination of carrots, celery, and radishes for ours! Low Carb Buffalo Shrimp with Blue Cheese
Ingredients
Buffalo Shrimp
- 1 Pound Shrimp Peeled, Deveined, preferably larger shrimp
- 1 Tablespoon Canola Oil
- ¼ Cup Frank's Red Hot Buffalo Wing Sauce
Blue Cheese Dressing
- 2 Ounces Blue Cheese Crumbles Plus some additional for topping
- ½ Cup Mayonnaise
- ¼ Cup Sour Cream
- 1 Teaspoon Worcestershire Sauce
- 1 Teaspoon Lemon Juice
- ½ Teaspoon Black Pepper
- ¼ Teaspoon Kosher Salt
Instructions
- Combine all the ingredients for the blue cheese dressing in a food processor and pulse until combined. Can also be done by hand with a whisk. Set aside.
- Heat a skillet over high heat. Toss shrimp in canola oil to coat.
- Once the skillet is hot, add the shrimp and sear for about 3-4 minutes on each side. Be sure not to overcrowd the shrimp to ensure they brown well.
- Heat the wing sauce in a microwave proof container for about 30 seconds.
- Toss the seared shrimp in the warmed up buffalo sauce and serve with the blue cheese dressing. Top with some additional blue cheese crumbles, if desired.
