Spicy Citrus Grilled Shrimp

With Cinco de Mayo coming up tomorrow, we thought it would be a great time to share one of our favorite weeknight Mexican-inspired recipes. These grilled shrimp are super easy and require only 15 minutes of marinating for delicious flavor.

They make great shrimp tacos, but are also perfect alone served with a side of grilled vegetables or Mexican rice. We opted for a low-carb option tonight and paired it with some grilled sweet potato, zucchini, and jalapeños.

We love grilling the shrimp using our flexible locking skewers we got off of our wedding registry at Sur La Table so the shrimp can’t slide off the skewers!
