Latin Style Garlic Pork Ribs

Summer is officially here, which means it’s grilling season! As any good Texas, we love some tasty BBQ ribs, but there plenty of tasty BBQ recipes out there. Rather than sharing another boring BBQ recipe, we are showcasing one of our favorite ways to prepare ribs. We love making this Latin style garlic pork ribs recipe. It’s how pork ribs are almost exclusively prepared in Argentina, where Marcelo’s family is from. It’s very different and unique from the traditional BBQ style, but packs so much flavor from the garlic and parsley.

Latin Style Garlic Pork Ribs

Argentinian grilling is known for focusing on different cuts of beef and sausage. However, it’s not uncommon that you’ll find these garlic pork ribs cooking at a Sunday family asado too. The baby back ribs are preferred over spare ribs. They’re a bit meatier and hold up during baking better. The flavors of garlic, parsley, and vinegar are similar to the classic chimichurri sauce that is often served alongside grilled meats. The addition of the paprika and cumin and a little spice that takes them over the top.

Latin Style Garlic Pork Ribs

I highly recommend marinating overnight, if possible. This allows the ribs to really soak up that garlicky, vinegary flavor. We bake the ribs in the oven for about 3 hours, but we are very curious to try this recipe out in the Instant Pot to cut down on the cooking time. We’ve heard great things about pork ribs made in the pressure cooker. If you’re familiar with cooking ribs in the Instant Pot, you could definitely try them out that way and still finish them off on the grill like we did. I don’t, however, recommend skipping the grilling part, as this adds a nice char to the ribs.

We top ours off with some extra fresh parsley. I recommend serving them with a big green salad, but they also pair well with some black beans and grilled corn on the cob. It’s a great recipe for the upcoming summer holidays!

Ingredients
  

  • 2 Racks Baby Back Ribs
  • 3/4 Cup White Vinegar
  • 1/4 Cup Olive Oil
  • 1/2 Cup Parsley
  • 8 Cloves Garlic
  • 1 Tbsp Paprika
  • 1 ½ Tsp Cumin
  • ½ Tsp Black Pepper
  • 1½ Tbsp Kosher Salt

Method
 

  1. Combine all ingredients except the ribs into a blender or food processor and blend until smooth.
  2. Place the baby back ribs into a deep baking dish. Pour the marinade over them and massage gently into the ribs.
  3. Cover with foil and let marinate for at least 6 hours or overnight.
  4. Preheat oven to 275F. Place the baking dish (still covered with foil) directly into the oven. Bake for 3 hours. After baking, you can refrigerate until ready to grill.
  5. Prep your grill (charcoal or gas). Over high heat, sear the ribs for about 3-5 minutes on each side until charred. Baste occasionally with remaining marinade in the baking pan. Serve immediately.
