Pesto, Sundried Tomato Goat Cheese Dip

The holiday season has officially started! We had our Friendsgiving gathering this weekend and started going through our Christmas decorations, so it’s time! We absolutely love the holiday season and all the parties that come along with it. Having a few easy appetizer recipes in your toolkit is essential this time of year. This pesto and sundried tomato goat cheese dip takes all of 5 minutes to put together. It travels well, making it a great potluck option, and does not require any cooking! A win-win in our books.

Goat Cheese Dip

Ingredients/Substitutions:

When trying to come up with simple appetizers, we try to think about classic flavor combinations. Things that we know will always taste delicious together. Pesto and sundried tomatoes are one of those combinations for us! You can use store bought pesto, although we opted to use our carrot top pesto made with walnuts for a more fall flavor profile. We highly recommend avoiding the sundried tomatoes in oil, if possible. These tend to be super salt and may make the dip more watery. Look for the dried tomatoes instead. We actually used some of the sundried tomatoes from our trip to Italy last year!

Holiday Appetizer: Goat Cheese Dip

Preparation and Serving

Now, simply throw all your ingredients into a food processor, pulse for a few seconds, and you’re done! It’s as simple as that. We served ours with some toasted baguette rounds. Use any toasts or crackers you like, but I would avoid any that are overly salted, as the dip is already on the saltier side.

Ingredients Method

Ingredients
  

  • 4 Ounces Goat Cheese
  • 4 Ounces Whole Milk Ricotta
  • 4 Tablespoons Pesto
  • ⅔ Cup Sun Dried Tomatoes
  • Crackers or Toasts for serving
  • Fresh Basil for topping Optional

Method
 

  1. Combine all 4 ingredients into a food processor. Pulse to combine until mixture appears smooth.
  2. Top with chopped fresh basil.
  3. Serve with your choice of crackers or toasts.
