With Cinco de Mayo around the corner, we thought we share a round up of some of our favorite Mexican recipes on the blog! Even if you don’t plan on celebrating, I think we could all use a little bit more Mexican food in our lives, am I right??

Mole Chicken Tacos:

Recipe linked here. We were introduced to Hernan Mole products a last year when we got to attend the Dallas Chocolate Festival and fell in love! If you’ve ever had a traditional Mexican Mole, you know how complex the flavors are! It’s very hard to get the ingredient list together and recreate it at home. Hernan makes an amazing jarred mole with all simple ingredients that turns out perfect every time! Plus they are doing some specials on their site right now for Cinco de Mayo! Fish and Shrimp Ceviche with Plantain Chips:

Fish and Shrimp Ceviche with Plantain Chips

Recipe linked here. We absolutely love the fresh and bright flavors of a ceviche. Perfect for Cinco de Mayo parties, this dish comes together quickly, requires no cooking, and will impress all of your guests. Plus, it’s healthy! We pair the ceviche with homemade plantain chips in this recipe, but you can buy plantain chips at the store or serve with plain tortilla chips!

Smoky Mezcal Margarita:

Recipe linked here. Mezcal is a slightly smokier and more powerful cousin to tequila. It’s made from the same plant, agave, but the agave is cooked in an underground pit over a fire, resulting in the potent smoky flavor. If you’re looking for a change from a basic margarita for your Cinco de Mayo celebration, this is it!

Simple Black Beans:

Recipe linked here. Beans are SO versatile. We always have a few assorted cans in our pantry, especially black beans. We love the texture and flavor profile of these beans best. This is our go to recipe to jazz up a simple can of black beans, perfect to serve alongside some tacos or enchiladas!

Spicy Citrus Grilled Shrimp:

Recipe linked here. We love grilling shrimp! They cook so quickly and the grill adds that charred taste that’s hard to recreate on the stove top. So, if you’re planning on grilling this weekend, highly recommend adding these to the menu! The pair perfect with a beer or one of those Mezcal margaritas we linked above.

Recipe linked here. If you’re looking for a healthy, low-carb keto or paleo Cinco de Mayo meal option, look no further! This is one of our favorite healthy but satisfying meals. The chard is very mild in flavor and almost unnoticeable in the recipe. Highly recommend!

Recipe linked here. What celebrates Cinco de Mayo more than some fajitas?! If you find us at a Tex-Mex restaurant, chances are we’re ordering fajitas. Luckily, they are incredibly easy to prepare at home. We have a healthier version here served over salad, but you can always add the tortillas, guac, cheese, and sour cream and make your own fajita bar using this recipe.

Hope everyone has a wonderful weekend, whether you’re celebrating Cinco de Mayo or not, you can always use an ice cold margarita and some tacos!
